Do you like tofu?
I love it for brunch when I don’t want to have my beloved eggs. So if you too want to try something a bit different for your cooked breakfast, brunch or lunch, why not try tofu scramble one day instead of making scrambled eggs?
Here’s what I do:
Crumble firm tofu into a frying pan.
Add a dash of extra virgin olive oil, salt, turmeric (the colour makes it look more convincing for egg lovers), plus any other spices you like (I may add ginger, smoked paprika, nigella seeds, sumac, fenugreek seeds, sesame seeds, chilli flakes… – the more the merrier usually in my kitchen!)
If you want that eggy sulphurous umami taste, you can add Himalayan/Indian black salt, kala namak.
Use a fork to mix the spices and oil with the tofu, breaking bigger bits into smaller crumbs while it heats up, until it resembles scrambled eggs.
I also like mixing in veg and herbs.
In the pic, I added grated cooked beetroot, cavolo nero kale and fresh coriander to the pan into the spicy tofu.
